Ever-attentive restaurateur Paul Chhabra introduced much of Hampton Roads to masala, curry, tandoori and other Indian delights when he opened Rajput in Hampton in 1999. He consistently delivers quality food and gracious service since moving his beautifully decorated dining room to Norfolk (and Suffolk). Rajput rolls out buffets (the monthly vegan-themed spread is especially popular) as well as a menu with more than 300 dishes of delicately prepared seafood, lamb, beef, vegan and vegetarian entrées, from chicken, goat (on bone) or lamb kadhai with tomatoes, green pepper and onion sautéed in an Indian-style wok, to bhel puri (puffed rice and lentil crisp noodles with chopped onions, tomatoes, potatoes, mint and tamarind sauce). Dishes are mildly seasoned, so specify if you’d like to have the heat turned up. A favorite starter is the Rajput Assortment, featuring chicken tikka, vegetable samosas and vegetable pakoras. As is often the case with Indian fare, sauces and chutneys can make the meal, and these are first-rate. Salads, such as the kachumber of cucumber and tomatoes, are a cool contrast to the warm spices. Desserts are limited, but try the mango kulfi (“Indian ice cream” made with milk and nuts), gajar halwa (warm carrot pudding with raisins) or gulab jamun (sweet pastry balls in honey syrup).
