THIS RESTAURANT HAS CHANGED NAMES The Schoolhouse at Cannondale Restaurant Review:

At one time, this structure was the site of a pre-Civil War schoolhouse, but now it serves as the home to a New American restaurant. Restored to its original condition with hardwood floors and wooden chairs that recall its previous life, the spacious room has beige and black houndstooth-pattern banquette seating and other rustic touches that provide an elegant dining scene. Emphasizing locally grown ingredients, the dinner menu features such appetizers as a light and refreshing salad of baby beets, fennel fritter, deviled quail egg and baby lettuce and a creamy foie gras torchon with pickled cherries and toasted brioche. Entrées reflect the same philosophy, as in a Painted Hills short rib with sautéed beet greens, smoked potato purée, pickled beech mushrooms and espresso caviar. Or choose a lightly smoked trout, celery root purée, brown butter leeks and potato gnocchi. The wine list highlights both old-world and new-world selections that pair well with the creative fare. And the chocolate soufflé earns an A+.
