About the restaurant: A walk through Bellagio's dazzling botanical gardens to Michael Mina's entrance sets the mood for an exquisite dining experience. The focus is on seafood, which is flown in by private plane daily.
Food & Drinks: Regarding menu creation, executive chef Raj Dixit shared that outside of the Mina staple dishes (ahi tuna tartare, lobster pot pie), he has the freedom to create new menu items, and a main focus is to use the whole fish, using all parts to make something unique, such as Kabayaki grilled collar with white soy, yuzu and black truffle. Guests may order à la carte or select from tasting menus. Among sweet finales are "textures of chocolate" with cocoa chiffon, milk chocolate pot de crème and burnt caramel ice cream. The exciting wine list matches the creative fare.
