Michel Trama Restaurant Review: Michel and Maryse Trama have a vision and that is why they have succeeded through the bad times and the good. They have made this exquisite fortified bastide, formerly the seat of the Counts of Toulouse, into a crown jewel. The décor is the most fine-tuned balance of old and modern you'll find, with utmost respect for the old stones of the bastide and minimal touches of modern and artistic to highlight them. When you walk into L'Aubergade, you walk into a world they've created especially for you, a labor of love, that they offer you with the generosity, irreproachable standards and years of dedication it takes to create a work of genius. Every detail is taken into consideration, and the experience touches all your senses, but of course especially your tastebuds. Some of Michel Trama's creations, such as his hot foie gras "hamburger" served with cèpes and his pigeon roasted with spices, have become classics. But new ideas are never what's lacking for this self-taught master of the art who never gets stuffy even after all his success and amuses himself with such creations as polenta French fries with escargots in simple parsley butter, or marvelous spring vegetables with pure salt essence. Desserts are yet again a marvel. You must always save room! Dream of vanilla-flavored thyme-honey jelly with berries, crystallized green apples, and his most original of original desserts, inspired by his passion for Havana cigars: the double corona of nougatine stuffed with spiced cream and served with its pepper-flavored "tobacco leaf." Just the thing to slip down before you recline in the cigar room under the Giotto-inspired star-studded ceiling. Enough to make you think you're in heaven... Reasonable wine prices to soften the shock. So make the trip to Puymirol, for a dining experience that is pure hedonism.
