Miguel’s is a go-to favorite for folks in Corona, and the Vasquez family has parlayed the restaurant into a burgeoning empire that includes a chain of fast-food eateries called Miguel’s, Jr. In a spacious, nicely appointed room refreshingly devoid of kitsch, a loyal clientele begins with miniature chimichangas, quesadillas or prawn cocktails before moving on to local faves like a formidable “el garbage” burrito (best served wet) or respectable Baja-style fish tacos. Hearty appetites are satisfied by a New York strip steak accompanied by a stuffed pasilla chile; or chicken bathed in a 24-ingredient, Pueblan-style mole.
