 This funky, formal room is the hip place to dine for Palm Springs weekenders. Darkly paneled like an old-fashioned gentlemen’s club, and with a wild assortment of art on its walls ranging from kitsch to pop nudes to late-sixties abstracts, Mister Parker’s is the ideal location for an illicit rendezvous or a not-too-proper party. A stripper might emerge from a cake and be perfectly at home here. In short, it’s fun. Set off behind a heavy curtain just off the reception area of the Parker Palm Springs, the seductive dining room features a menu of classics prepared with spin. The foie gras is served with a red wine date sauce (an homage to the desert), the braised pork belly has a pomegranate reduction, the tuna tartare is accompanied by a tempura-fried quail egg. The party mood continues in the wine listings, which are divided into such non-traditional categories as “crazy,” “cool” and “sexy.”
