The times, they are changing---even at one of Cleveland's most venerable hotels. The Ritz-Carlton bid farewell to its elaborate restaurant Century---located at street level inside downtown's Tower City Center---and welcomed Muse, a small-plates eatery ensconced within the hotel's sixth-floor lobby level. Muse moves things up a notch in terms of more than real estate, too: Chad Ellis' ambitious menu is a leap ahead of Century's dining experience. The concept is all about choice. All portions weigh in at around three to five ounces, letting diners mix and match or simply eat lightly. A peekytoe crab cake arrives resting on a bed of wilted Ohio greens in a blood orange hollandaise, while bison tenderloin carpaccio is accompanied by a petite salad, truffle emulsion and fried capers. Rather than dividing the menu into the predictable salad, appetizer and entrée courses, Muse's menu is simply divided by type of food: salads, poultry, fish and meat. Desserts are presented similarly, and they're priced to encourage ordering two or even three of pastry chef Elliot Callahan's finales. As expected, Muse's wine list is excellent. |
