The Encinitas outpost of the Little Italy fast-casual spot offers pizzas by master pizzaiolo Alessio Poli. The light and crispy crust is the result of a 72-hour slow dough rise. Creative combinations include the BAPO with bacon, potato, mozzarella and rosemary, and "The Old World" with porcini mushrooms with truffle pâté, parsley and mozzarella. Salads run the gamut from SuperFood Me with kale, walnuts, quinoa, avocado, sprouts and green beans (nice with a little sous vide salmon on top) to Thai Crunch mixing greens with pomegranate, Mandarin orange, caramelized cashews and wontons dressed with a sesame ginger peanut sauce with wasabi. The porchetta sandwich mingles shredded pork with arugula, sun-dried tomatoes and pesto sauce on warm focaccia. Look for house-made cannolis and tiramisu, and decadent Nutella focaccia, too. The company has a good healthy ethos, and stands out as the only pizzeria in San Diego to be green certified. The place also champions local vendors and farmers, and there’s even an in-house nutritionist.
