In this peaceful world, tea is the drink of choice, and it is offered in so many varieties that guests may need help matching a tea to the artfully presented East-West starters. Worth consideration --- but pricey --- are any of the meals served in bowls; all are made with fresh California ingredients and carefully described as "Japanese-inspired" rather than simply Japanese. Udon or soba noodles come in a flavorful broth with a choice of salmon, pork tenderloin or smoked trout.
