Chef Douglas Rodriguez started the whole notion of Nuevo Latino cuisine during his stint at YUCA in Coral Gables. He has since gone on to open a number of successful restaurants around the country. Now he's back home on an up-and-coming stretch of Biscayne Boulevard with OLA Miami---and he's better than ever. Start with one of a dozen ceviches, crystal clean renditions packed with audacious flavors. This menu is not meant for timid diners but rather for those who revel in romping through uncharted gastronomic terrain. Rodriguez has a tendency to blend seemingly incongruous ingredients in a way that allows each to retain its fiercely independent taste while simultaneously melting together. In other words, tender foie gras in an almond-fig empanada wrap is even better than it sounds. Oysters Rockefeller gets a Latin makeover via the addition of horseradish, fufu (plantain-cassava mash) and Peruvian mint to the spinach, bacon and plush shellfish. Desserts are no less innovative---try guava cheesecake topped with crema nata ice cream and Grand Marnier-soaked prunes. Olé OLA!
