There are plenty of Denver restaurants that subscribe to the snout-to-tail philosophy, but few adhere to the mantra quite like Old Major (it's named after the pig in Animal Farm). The exhibition kitchen, commanded by chef Justin Brunson, also lays claim to its own in-house butcher. In the red-walled, dark-wooded dining room, which mimics a contemporary farmhouse, a glass-enclosed charcuterie room showcases sausages and a slew of other hand-crafted piggy parts that often end up on your plate: in the smoked pork shank stroganoff; the Italian sausage with gravy, grits and broccolini; and in a "nose-to-tail" soup that comes with braised belly, confit rib, Portuguese sausage, crispy ears noodles, soft poached egg and house kimchi. Still, despite its skew toward pork, the kitchen is equally successful when it comes to seafood and fish, venison, beef and its inspiring vegetarian plates. The house-made pretzel rolls are pure nirvana, and desserts like the maple bacon custard festooned with candied bacon, are more reasons to admire the restaurant's commitment to quality. Smashing craft cocktails, beers that appeal to even the biggest hops snobs and a lovely wine list are highlights, too.
