Hyatt Regency Orange County, which is located on Harbor Boulevard in Garden Grove, has opened two new restaurants, TusCA Restaurant and OC Brewhouse. Part of the hotel's $25 million renovation, the two restaurants are located in the hotel's 17-story atrium lobby. TusCA, as its name implies, is a hybrid of California and Tuscan cuisines using local, seasonal ingredients and traditional North Italian recipes. OC Brewhouse is an upscale brew pub concept, which features the "blizzard beer" tap system, a variety of classic pub grub and HD Direct TV programming on tons of flat screens. RAYA at The Ritz-Carlton, Laguna Niguel The Ritz-Carlton, Laguna Niguel has shuttered its longtime Restaurant 162' and opened RAYA in its place. Chef Richard Sandoval (Maya, Tamayo, Pampano, Zengo, Isla, La Sandia, TNT, Ketsi, La Hacienda, Masa 14) has brought his pan-Latin coastal cuisine to this reimagined ocean view space, while chef Greg Howe (Rattlesnake Grill, Pinon Grill) oversees the kitchens. Chef Sandoval prepares his cuisine with sustainable seafood and local produce. Some of the menu items include coconut shrimp ceviche, hamachi tiradito, ancho chile- and pistachio-crusted tuna, chipotle-miso glazed black cod, and achiote barbecue salmon. Fleming’s Premeries New Classic Dishes
Tired of the same old entrées? Fleming's Steakhouse & Wine Bar has teamed up with OC chef, TV star and radio host chef Jamie Gwen to create some truly delectable "new classics." Along with Tampa-based chef Jeannie Pierola, chef Gwen has triumphed with these healthy and affordable female-friendly dishes such as porcini-rubbed filet mignon, a modern peppercorn steak, line-caught Tillamook Bay petrale sole and earthy roasted mushroom ravioli. Andrea Opens for Lunch
The Resort at Pelican Hill's Andrea is now open for lunch, with outdoor patio seating for the summer months. The lunch features highly authentic Italian dishes along with a three-course "express menu," which costs $30 and is guaranteed to be served in 30 minutes. Prego Launches Weekend Brunch
Prego's chef Ugo Allesina has launched a weekend brunch menu. Held from 11 a.m.-3 p.m. on Saturdays and Sundays, Prego's brunch offers Italian-inspired egg entrees along with eggs Benedict, frittatas, French toast, Belgian waffles and beignets. Chef Shuffle

Justin Miller is the new chef at David Myers' Pizzeria Ortica. Ortica's original chef Stephan Samson has intentions of opening his own restaurant in L.A. Chef Miller is now helming the wood-burning ovens at this venerable Italian bistro in South Coast Plaza's arts and performance district. An OC native, Miller is a graduate of the Art Institute of California Orange County and has worked at such classic OC dining institutions as The Balboa Bay Club & Resort, Mastro's Steakhouse and the now-shuttered Dolce. Jason Travi, formerly of Fraîche in Los Angeles, is now executive chef of Mesa. He has introduced some new dishes to the menu, including salt cod fritters with romesco sauce; wood-fired roasted shrimp served with kale and chickpeas; and stout-braised short ribs with potato purée, caramelized onions and baby carrots. The restaurant has also introduced "House Party ‘til Sundown," a special event taking place Tuesday through Saturday nights with complimentary tray-passed hors d'œuvres. Sage on the Coast is changing hands, as Sage's beloved chef Rich Mead is leaving this cheery seaside space in Crystal Cove, which is reopening in June as Avalon Grill. North Orange County residents, however, should be celebrating, as Mead will be opening Canyon in Anaheim Hills' Canyon Plaza by late May. Canyon will be an organic and friendly spot, so says Mead, for North OCers to hang in the bar or in the casual main dining room for his delectable contemporary American cuisine.
