The Playground, the highly anticipated brick and mortar restaurant created by former Lime Truck chef and Food Network's The Great Food Truck Race winner Jason Quinn, is now open. The venue, located in Santa Ana's revitalized downtown district, touts a weekly changing lineup of New American small plates made from local and homemade ingredients, along with a beverage program focusing on a rotation of craft beers. The Irvine Spectrum is welcoming the eatery Cucina Enoteca to its sprawling property in December. The restaurant, which is the sister venue of the popular San Diego dining spot Cucina Urbana, will feature a menu filled with updated takes on classic Italian fare served either traditional or family-style. The venue will also contain a wine shop, in which patrons can purchase a selection from their list to enjoy either with their meal or at home. Paul Martin's American Grill, the Orange County spinoff of El Segundo's Paul Martin's American Bistro, has opened its doors in the Irvine Spectrum. Restaurateurs Brian Bennett and Paul Fleming have joined forces with Orange County chef Jorge Estrada to offer contemporary cuisine that emphasizes the close relationships the trio has forged with more than 40 farmstead producers. Entrées include items such as "brick" chicken with mashed potatoes and an herb au jus, and Prime New York steak served with Pt. The exterior of Bruxie in Brea Bruxie has opened a second Orange County location within Downtown Brea. The quick-service eatery, which also has a venue in the Old Town Orange, serves up more than a dozen sweet and savory gourmet sandwiches using classic Belgian waffles instead of bread. Sandwich offerings include a hot pastrami served with Gruyère and cider slaw, and a turkey club accompanied with Gruyère, applewood smoked bacon and pesto aïoli. Sweet items include lemon meringue served with raspberries, and a chocolate-filled waffle paired with caramelized pearl sugar. Salads, floats and homemade sodas are also available. Special Winter Menu at Z'Tejas
Z'Tejas at Costa Mesa's South Coast Plaza has rolled out a special winter menu. Longtime executive chef Danny Stevens is supplementing the eatery's list of Southwestern fare with several seasonal takes on comfort food infused with a touch of heat. Featured dishes include a tomato basil soup paired with a grilled smoked roast beef and cheese sandwich, served with chipotle horseradish au jus, as well as jalapeno cornbread-stuffed striped bass served with a brown butter sauce. Bruno Serato, chef and owner of Anaheim White House Local Chef on 2011 Top 10 CNN Heroes List
Anaheim White House chef/owner Bruno Serato has been named one of the 2011 Top 10 CNN Heroes. He created the charity Caterina's Club to raise money to help underprivileged children, and his restaurant has provided hundreds of thousands of pasta meals for the Anaheim Boys & Girls Club. Fall Prix-Fixe Menu at Roy's
Roy's is offering a fall prix-fixe menu that will be available through January 7. For a first course, diners have the option of crispy potato croquettes with salted cod, chive, smoked paprika and macadamia nut romesco; Fuji apple salad with smoked almonds, Madras curry purée, and sherry bourbon vinaigrette; or yuzu crab stuffed shrimp. Choices for the second course include brown butter seared salmon, Asian style coq au vin and cherry stuffed pork tenderloin roulade. For dessert, guests decide between spice cake with white chocolate pumpkin mousse and cranberry sauce and Roy's Melting Hot Chocolate Soufflé. The cost is $35.95 per person (tax and gratuity not included). This menu is available at Roy's in Anaheim and Newport Beach.
 


Chef Shuffle

Tabu Grill in Laguna Beach has tapped Joshua Hasho as its new executive chef. A native of Michigan, Hasho comes to the popular Orange County coastal town after honing his craft in such establishments as The French Laundry, and most recently The Ritz Carlton, Marina Del Rey. Hasho plans on augmenting Tabu's menu through refined rustic cuisine inspired by seasonal and multicultural influences. Some of the new dishes Hasho is unveiling include short ribs with goat cheese polenta and lemon tempura, and seared pork tenderloin paired with slow-cooked pork belly and served with a root vegetable mash.
