Chef-owner Fabrizio Aielli was a sous chef under Roberto Donna at nearby Galileo until he began cooking at his own excellent restaurant with its more formal upstairs dining room and livelier downstairs space. Aielli specializes in traditional Italian dishes and his own outstanding version of contemporary Venetian cooking. His pastas are simultaneously light and complex in flavor, and he prepares a creamy, olive-oil-enriched polenta. On the daily-changing menu, dinner may begin with an antipasto of robiola cheese topped with slices of delicate eggplant along with rustic salami. If theyre available, order the fettuccine with rabbit ragoût or the whole fish baked in parchment paper with artichokes. For dessert, choose the turban of chocolate, if its available. Check out the crowd: You may see some major political players. Also check out Aiellis other excellent restaurant, Teatro Goldoni, another downtown location. There the focus is on Venetian cuisine and the dramatic setting its name implies.
