 Owner-chef Clif Nelson is homegrown, with a devotion to fresh Florida produce, meats and seafood. Dishes have a feeling of abundance such as the chicken Caesar salad with a profusion of roasted garlic, juicy chicken, freshly-shaved Parmesan, hyper-ripe plum tomatoes and toasted pine nuts in addition to the usual greens and dressing. Lunch represents the best value at Paramount with imaginative salads plus savory sandwiches on crusty bread or focaccia and soups in various combinations. Dinners are far pricier, but for herbed rack of lamb and rich cheese couscous, it's worth it. Swamp natives love the Sunday brunch---don't miss the crab cakes hollandaise or the shredded duck breakfast burrito. Tiny and quiet, this intimate setting is a nice foil for the jazzy food.
