Pearl Bakery Restaurant Review: Pearl Bakery is the source of the bread you'll find at many of Portland's finest restaurants and grocery stores. The secret is in the starter, in particular the levain, which is a flour and water mix in which wild yeasts and flavor-producing bacteria provide the leavening. The baked loaves are dense and moist yet pocked with airy holes. In the case of the olive ciabatta, these holes are studded with olives. Multi-grain breads, including a dark German rye, are also good choices. The bakers turn out an array of items every day, from cookies to almond croissants and Parisian-style macarons. Pick up a loaf to go, or enjoy a snack or stay for lunch in the cheerful storefront seating area. Seasonally changing sandwiches may include slices of local pears with Gorgonzola, roasted eggplant with sun-dried tomato pesto, or caprese with local heirloom tomatoes. We also recommend the coffee.
