The Tampa Bay area has long been a hotbed for Spanish and Cuban cuisine, thanks in part to local institutions like Pepin, which has prepared Spanish-style dishes for more than a quarter century. This tradition has been perpetuated with favorites like "pompano ala sal," fresh pompano cooked in salt and filleted tableside. Another plus: While the décor is handsome and warm, with dark wood and colorful reproduction paintings by Picasso and Dali, Pepin is still very much a family place, with a friendly, considerate waitstaff. As a result, locals come to meet friends; singles mix and mingle; and tourists pop in so they can say they've eaten at Pepin. The tapas selections are especially popular. Try the ceviche de marisco (shrimp, scallops, calamari and fish marinated in a cilantro-lime sauce).
