With its blond hardwood floors and sunny paint job, Saray provides an informal yet pretty setting in which to begin an exploration of the intriguing byways of Turkish and Middle Eastern cookery. Newbies might start with a Jerusalem salad topped with tahini sauce, grape leaves stuffed with rice or a falafel plate, which recombine Mediterranean staples in various forms. Baba ghanouj, homemade yogurt and tzatziki round out some of the cold starters. "Palace style" thinly sliced pastrami and hot hummus with zucchini pancakes are simple and hearty. There's reasonably priced quail, lamb and chicken kebabs, the highlight of any visit --- they're gently charred, juicy and smoky --- as well as meatballs, a vegetable casserole and cabbage rolls filled with lamb, beef and rice. Desserts include baklava, sutlac (rice pudding), kazandibi (caramelized pudding) and kadayif, a texturally interesting variant on baklava made with shredded wheat, rice pudding and caramelized pudding. Hyper-caffeinated Turkish coffee and complimentary black tea provide a finishing kick. Friendly service is accommodating to neophytes.
