The name of the game is pierogi, and there are a dizzying number of options when it comes to the pillowy treats. Warm up to the idea with crispy potato pancakes or a bowl of tangy, beet-red borscht filled with plump ravioli. When you’re ready to move on to the namesake eats, immediately zero in on the potato and cheddar pierogi. Savory selections are best served fried and come with sides of sour cream, sweet, carrot-laced kraut, and smoky hunks of bacon. Meat-filled pyzy (potato dumplings) are a fine alternative. Finish with sour cherry pierogi (boiled works best here), which arrive with a dollop of sweet whipped cream.
