Dining room at Pierre au Palais Royal, Paris, franceEric Sertour, former director of the Résidence Maxim Hotel in Paris, has put his energy into redoing this centrally-located establishment. He has made it a cozy and contemporary space, all in black and white, and has entrusted the cooking to Konrad Ceglowski, a native of Poland who has worked with Gordon Ramsay and Jacques Cagna. On the plate, expect hare pâté with ceps; scallops and oysters tartare with green apple and borage salad; roast monkfish with pumpkin gnocchi; Salers beef fillet with bordelaise sauce and root vegetables; and caramel moelleux made with salt butter. There are many inspired dishes of both yesterday and today, offered at prices reasonable for everyone (menus at €33 and €39).
