This restaurant is owned by Pierre Sang Boyer, famous in France for his participation in a televised contest. The dining room is decked out with wooden tables and a counter facing an open kitchen. Pierre Sang prizes little portions and unusual combinations of flavors, with sometimes useless flourishes on the plate like the pan-seared sugar that coats the grapes served with the foie gras and caramelized hazelnuts. The main menu at lunch for €35 is called “freestyle,” which means that the patrons can’t choose their dishes, relying upon the inspiration of the chef. According to the day of your visit, you may have mackerel with melting burrata, herring eggs, tomato and pistou, prime rib with potatoes, cactus leaves and Korean pepper and, to end the meal, a tangy and delicious apricot with white chocolate cream and apricot and passion fruit sherbet. Interesting wine list with 20 items suggested by the glass.
