Pink Lotus’ pitch is that it offers the real thing, like Peking duck done in the classic style with pieces of crackly skin and luxurious fat or a whole fish steamed with aromatic vegetables that infuse the flavor of the flesh. They’re done commendably well within a converted French Quarter townhouse graced with a cavernous, enclosed atrium that serves as the main dining room. Palates seeking an exotic fare are courted with such enticements as shark-fin soup, a cool salad of jellyfish tossed with sesame oil and scallion or sea cucumbers in black-bean sauce. The service staff’s congeniality softens the effect of the occasional glitch.
