You can’t take your eyes off the chefs working in Polistina’s open kitchen. So much energy, so much steam rising---well, it’s riveting---dining theater at its best---and alas, the best thing about this casino restaurant. The food comes in a weak second. This is an attractive restaurant in a formulaic way---pictures of Italy on the walls, tiled floors. Service is friendly and adept, and portions, either family-style platters or individual servings, are more than generous, but the taste doesn't measure up to the rather hefty price tag. Monday night offers the best value with "meatball Monday," when this Italian specialty is offered at affordable prices. The "salumi" cured on the premises is better than average with bresaola, pork coppa and soppressata. Desserts are worth sampling, especially the semifreddo with tangy Meyer lemon and pistachio.
