| This Fantasy Springs restaurant demonstrates how to design and run a three-meal-a-day eatery that will satisfy both resort- and casino-goers, and visitors and desert locals alike. Neatly shoe-horned into a two-story, wedge-shaped space off the resort's mezzanine, the sleek dining room offers, at dinner, a wide selection of Mediterranean-influenced dishes, with a touch of Latin America and a healthy base of California. A selection of bar food-style items to be "shared for the table" include panko-crusted mozzarella "lollipops," calamari with pesto aïoli, and fried chicken with wing sauce. The rest of the menu has something for everyone, providing no one wants anything too surprising: chicken potpie, a nicely balanced pork "osso buco" with horseradish potatoes, and an interesting vegetable plate that includes a wild mushroom soufflé and roasted vegetable risotto. The desserts, too, are old and very comforting friends, sometimes with a facelift. Try the apple tarte skillet with vanilla ice cream. |
