Chef Sébastien Gravé and maître d' David Bottreau, with the help of their friend Christian Constant, have opened this small Basque bistro close to their first business, Les Fables de la Fontaine. Pottoka has become a cult favorite by delivering good and original courses at friendly prices. Dishes might include beef carpaccio with sauce gribiche and cogollos (lettuce hearts), the Cochonno Tonato (a version of vitello tonnato, but made with pork) with caper and artichoke sauce; pork spareribs caramelized with spices and vegetables a la plancha; and chicken Basquaise with chanterelle mushrooms. You may decide to finish the meal with bleu de brebis cheese from Bethanoun farm and the fresh apricot on vanilla mascarpone with a pistachio financier. Set lunch menus at 17 € and 22 €.
