Preserve Restaurant Review:


Preserve is a short walk from historic downtown Annapolis’ dock. It has a seasonal al fresco area in front and a white-washed brick interior. Guests can sit at the open kitchen counter, on banquettes upholstered in sailing canvas or at the bar with a chalkboard listing rotated local craft brews on tap and wines. Chef Jeremy Hoffman’s Pennsylvania Dutch roots are reflected in the restaurant’s mantra of canning, pickling, preserving and fermenting. Enjoy a vodka with house-made giardiniera or go non-alcoholic with Capital Kombucha. The menu lets diners decide among “Snack, Starter, Veg Out, Main and Sweet.” Go all in with the charcuterie, pickled ramps and caper berries or sizzling cast-iron mushrooms with preserved lemons. A generous selection of small plates, such as bread-and-butter green tomatoes with goat cheese, grilled bread and shaved onion, Preserve’s play on panzanella, or the quinoa and kale with spicy pickled scallions amplify the vegetarian selections. Entrées are limited, but don’t miss the pork and sauerkraut or the griddled rice cakes with fried sunchokes. Your sweet tooth should be indulged with Preserve’s version of a peanut butter Tandy cake.
