The first choice diners face at Prime is making a selection from an impressive list of cocktails. The blood orange margarita provides an extra kick, courtesy of the salt-and-chili-coated rim, and it goes well with a starter of black mussels nestled in a white wine cream sauce. Move on to the steakhouse wedge of iceberg lettuce with tomato, hickory-smoked bacon and blue cheese dressing. While Prime’s focus is on beef, and you can’t go wrong with the prime rib served with black peppercorn brandy sauce, the rack of Australian lamb is a worthy alternative. Prime also offers plenteous sides and options for vegetarians, including the smoky six-cheese mac ‘n’ cheese. For dessert, the freska mango with vanilla bean ice cream is a cinnamon and sugar coated wonton with ice cream tucked inside, topped with mango Merlot sauce. Choose from the 100-plus options on the wine list, which changes frequently but is weighted toward California labels. Live music is on tap Wednesday through Saturday, including a Frank Sinatra sound-alike who performs on Thursday. Prime Steakhouse’s elegant setting is appropriate for anything from a business meal to a romantic occasion or a family celebration.
