Proof Restaurant Review: Giving everyone in Penn Quarter a run for the money is Proof, which as its name suggests, leans heavily on wine and liquor selections to appeal to clientele. Fortunately, its barkeep is knowledgeable, and also willing to discuss the fancy steel-and-glass wine cellars that keep vintages at just the right temperature and with the right nitrogen content. Opt for a seat at the bar, where not only can you brush up on your beverage knowledge, you can also enjoy the rotating show of prints selected from the archives of the adjacent Portrait Gallery. The food is contemporary, inventive and seasonal, and we would want summer to remain just to enjoy the chilled summer corn soup. Desserts include sticky toffee pudding cake. Dinners are just as upscale and upbeat, and there’s the option of ordering a four-course tasting menu (with wine pairings, naturally).
