THIS RESTAURANT IS CLOSED Prova Restaurant Review:

Prova, which is the Italian word for “proof,” is set in the space that housed Donatella Arpaia’s previous pizzeria, an eponymous spot that garnered as much attention for its sparkly gold brick oven as the edibles that came out of it. The oven is now red and the pizzas are even better. Maybe because this time Arpaia has recruited chef Pasquale Cozzolino from Ribalta and restaurateurs Rosario Procino of Keste and Maurizio de Rosa of Sushi Nakazawa. The Neapolitan-style pies emerge bubbling with a vaguely crispy crust and the soupy center that is loved so much in Naples. The menu is split between classics and “pizza nuova.” Start with a selection from the former on your first visit and then indulge in an uni-topped pie or one with saffron and sheep’s milk ricotta. The wine list is focused on Campagna and the cocktails are bold (and pricey).
