Takeshi Omae’s modern ramen shop resides in a Sherman Oaks strip mall. The space features a glass front, open kitchen, light wood counter framed by neon-lit brick and white tile, and blonde wood tables paired with green cushioned chairs. Chef Omae doesn’t approach ramen quite like other chefs. Ramen options include versions with tomato, ground pork and mozzarella; and chicken ramen with boiled egg and vegetables. Still, it’s his burnt kogashi miso ramen that captures our imagination. Pork broth cooks for 40 hours, generating deep flavor, and hosts a choice of noodles, scallions, bean sprouts, kikurage, thin sheets of char siu, and a pile of burnt miso paste in the middle of the bowl. Supplement your ramen with teba gyoza, two juicy chicken wings filled with minced pork, cabbage and scallions. The meaty “dumplings” come with black sesame pepper sauce and spicy mayo. Fried chicken is also pretty tasty, with lightly battered dark meat submerged in bubbling soybean oil. Ramen By Omae doesn’t serve alcohol, but they do sell iced green tea, soda, Calpico and Ramune.
