: Richard Sandoval has conquered Mexican cuisine with his army of restaurants around the country. Now he’s moving south. That is, to Peru. Raymi presents Sandoval’s take on ceviche, pisco and other Peruvian delights. The menu is loaded with pisco-spiked cocktails and even intriguing pisco infusions (lemon grass or purple corn pisco, anyone?), all of which make for a nice start to the meal. Begin with an order of ceviche --- the Asian-accented tuna Nikkei, with soy yuzu and nori, is one of the best options --- before moving on to the pork belly and calamari chicharron, a delectable surf ‘n’ turf option. The crispy duck leg, paired with scallops, in a bowl of rice is also satisfying. Dolce de leche panna cotta and the lucama (a fruit in Peru) sundae are worthy desserts.
