Your first query needs to be if there are soft-shell crabs available, as Herndon manages to find the biggest ever. Here you can reconnect with his wild salmon soufflé, a most ingenious signature dish that adorns a slice of salmon with the soufflé and lets it ride a mound of fresh spinach. His cast-iron skillet fried chicken is another item drawn from Tiburon, as are his collard greens. Fried oysters with house-made rémoulade, crawfish cake and jambalaya are all spot-on.
