This nautical-themed room features the creations of a French-born chef who practiced his trade in some of Honolulus fine French eateries. Specialties include blackened sashimi (a sublime ahi tuna), calamari steak with macadamia nut sauce and the hearty bouillabaisse. Other good choices are the mako shark with garlic lime butter or Australian lobster tail stuffed with shrimp and scallops and sautéed in white wine cream sauce. For dessert, were fans of the New York-style cheesecake with caramel-pecan sauce. Wines from the Las Vegas Hiltons vast cellar accompany the savory cuisine.
