Enter through the lobby of the InterContinental Dubai Festival City Hotel to discover Reflets tucked amid the hustle and bustle of the busy property. A private elevator transports guests to the mirrored corridor and mother-of-pearl-accented walls, and to the restaurant. The seating area is embellished with baroque furniture and lavender-colored Murano glass chandeliers. The menu requires some guidance to comprehend, as each item is written like culinary poetry, but well-trained staff will help diners navigate the gourmet fare. Gagnaire’s style is to deconstruct a dish and then build it in front of one’s eyes, each consisting of several smaller accompaniments that arrive on individual plates along with the main component. For starters, foie gras came with button mushroom jelly, green pea ice cream scented with mint, green asparagus accented by cardamom, Ringo chocolate and carrots with argon oil, and Melba toast with cream of parsley spread. Mains seem simple, either seafood or meat. French rack of lamb is appropriately the house recommendation, roasted with oregano and glazed with tamarind juice; the hearty flavors of coated garlic, braised baby turnip and grilled spring onions harmonized on the plate. Although a glass of French red wine would have complemented this selection, the environment invites a bit of sparkling Champagne. The wine list, overall, draws significantly from France, and the sommelier has gone to great lengths to maintain a quintessentially Gallic touch. Labels from the U.S., New Zealand, South America and Lebanon, just to name a few, are also available. The pastry chef works his magic in the kitchen with a soufflé of Sicilian pistachio; strawberries, lemon, orgeat jelly and vanilla Chantilly; and a white chocolate mendiant and apricot “mirliton.” The team at Reflets delivers an experience comparable to its European counterparts, compelling visitors and residents of Dubai to enjoy a meal at this unique restaurant.
