Growing up in the Palace in Monaco where his father was the private adviser to Prince Rainier, Chef Charles Dale developed an early appreciation for refinement in food and service. He apprenticed himself to Alain Sailhac, then Chef at Le Cirque, at Georges Masraff’s restaurant in Paris, and later returned to New York to work for Daniel Boulud at the Plaza Athenée. A pilgrimage to Boulud’s hometown of Lyon landed him in the kitchen of Jean-Paul Lacombe, disciple of Paul Bocuse. He opened Renaissance in 1993 and it has remained Aspen’s numero uno destination for elegance, quality and seriously innovative fine cuisine. The small, softly lit room in earth and rose tones evokes memories of dusk in Provence. The Chef’s Tasting Menu---five or six courses---can be paired with matching wines and there’s also a Vegetarian Tasting Menu. Signature dishes include the black diamond risotto; espresso-blackened tenderloin of beef; and crispy Alaskan halibut with artichoke, shiitakes, and foie gras. The extensive wine cellar has depth in California, Burgundy, Bordeaux and dessert wines. The winter menu offers haute rustic shepherd’s pie, roast suckling pig with truffle-mashed potatoes and crispy crackling crust, and the trademark smoky pea soup with Maine lobster and brandy syrup.
