Republic Gastropub Restaurant Review: Republic’s sleek atmosphere quickly signals that it’s not your run-of-the-mill pub. The striking lighting and angular architectural features, not to mention massive state-of-the-art TV screens, give the restaurant a distinctly urban feel. Consult the knowledgeable waitstaff to select one of the hundred beers on tap, or order a flight to sample several in one sitting. Over two hundred local, domestic and international bottled beers are also available. While enjoying your suds, try the Scotch egg or homemade pub pretzel, and then dig into bock-battered fish ‘n’ chips or bacon-wrapped meatloaf stuffed with blue cheese. The popular Republic burger made with local-Angus beef is smothered with a caramelized onion and bacon relish, Gruyère, arugula and a fried egg. For lighter fare, we suggest the niçoise salad featuring seared ahi, fresh green beans, kalamata olives, red onions and potato confit with a white anchovy vinaigrette. Linger for a chocolate stout ice cream float.
