République Restaurant Review:

About the restaurant: République inhabits a building on La Brea Avenue notable for both its architectural style and storied history. The Spanish-influenced structure was built in the 1920s to be an office space for Charlie Chaplin. Decades later, the building became the birthplace of the La Brea Bakery empire by Nancy Silverton and the home of Campanile, where chef Mark Peel presided for more than 20 years. In its current edition, chef Walter Manzke showcases his talent for French cuisine, while his wife, Margarita, is in charge of breads, pastries and desserts.

Food & Drinks: If dining for breakfast, brunch or lunch, place your order at the counter in the bakery. In the evening, there is table service. The restaurant features a bar, communal tables and open kitchen, followed by the rear dining area and private and semi-private rooms upstairs. At dinner, start off with oysters or charcoal-grilled farmers market vegetables. Mains might range from Dover sole meunière to sweet corn agnolotti to duck breast and leg confit. Chocolate fondant tart provides an indulgent ending. Weekend brunch features brioche french toast, lobster omelets and kimchi fried rice topped with poached eggs. République is serious about its wine program and changes the selections daily. There are also several craft beers available plus traditional and market-inspired cocktails.
