The restaurant’s discreet frontage leads you into an elegant and stylishly low key restaurant, with pale walls, mirrors and modern crystal lighting. The bar has been much improved and enlarged from its previous small space at the front. However, getting a booking here remains one of the hardest tasks in London, and you must book two months in advance. But persistence pays off; this is a dining experience you’ll savour. The master himself is rarely there; instead the kitchen is run with admirable skill by Clare Smyth whose cooking is classically based, but thoroughly modern, with contemporary twists and turns. A ravioli of lobster, langoustine and salmon comes lightly poached in a bisque with a lemon grass and chervil velouté; punchier tastes are revealed in sautéed foie gras with roasted lamb sweetbreads, wine vinegar and almond velouté. Main courses satisfy equally as in roast fillet of firm turbot complemented, not overwhelmed, by autumn vegetables, with squid ink taglioni and citrus and coriander sauce. Pot roasted Northumberland beef fillet with meat and potato pie, quail’s egg and red wine sauce has a wonderful earthy flavour. Desserts stand up as well; try the tart apple parfait with sweet honeycomb, bitter chocolate and Champagne foam for a lesson in how to mix tastes impeccably. All this comes at a price, though the 3-course set lunch for £44.04 offers one of London’s great treats. A la carte 3-course meal £88.09; tasting menu £117.46.
