THIS RESTAURANT IS TEMPORARILY CLOSED The Restaurant Restaurant Review: THIS RESTAURANT IS TEMPORARILY CLOSED AND IS SCHEDULED TO REOPEN IN 2015. The Restaurant at Las Ventanas al Paraiso presents diners with beautiful views of the Sea of Cortez. Executive chef Fabrice Guisset prepares what the resort calls "Baja-Mediterranean" cuisine, sourcing organic ingredients from the Baja peninsula and cooking them in a healthy Mediterranean style. His dishes might include Merlot glazed tuna with onion marmalade; seared baby red snapper with vegetables ratatouille and mustard sauce; and roast suckling pig with sweet potato purée. Guests can also enjoy traditional Mexican cuisine with The Flavors of Mexico menu, or sample modern reinterpretations, like a tamale with corn sauce and foie gras, in the multi-course Mexican Tasting Menu.
