Rio Chama Steakhouse Restaurant Review: Located next to the New Mexico State Capitol, Rio Chama stands as one of Santa Fe's premier power restaurants. This clubby, handsome establishment is a favorite for off-the-floor political bargaining during the legislative session and a year-round destination for steak aficionados. The 16-ounce buffalo rib-eye is a massive dry-aged beauty with a nicely charred exterior, and the succulent Black Angus prime rib is slow roasted all day. Also noteworthy are the bar dishes (available in the main dining room), including a fondue blended with amber ale, and burgers ranging from prime rib to turducken. The enclosed patio is just the place for a quiet conversation or political negotiation, and a postprandial cigar in the humidor may just seal the deal.
