Named after the river which winds through Colorado's Sawatch Mountains and the town of Aspen, this Southwestern-inspired spot serves up lamb, chicken, beef, pork and fresh fish entrées all prepared by a wood-fired rotisserie, open flame grill or by wood-oven roasting. Appetizers include Yucatan-style Gulf shrimp and green chile pork, while specialties list pork shoulder carnitas, cedar-planked salmon, bacon-wrapped pork tenderloin and the signature "Big Ass" burger. Don’t skip on dessert with items like hot huckleberry bread pudding and brown sugar crème brûlée. The parent company’s seafood emporium, Wildfish, is immediately adjacent.
