Featuring American cuisine with a French twist, this elegant restaurant is the second fine dining eatery for chef-owners extraordinaire Wendy and Michael Jordan, whose three-year-old Rosemary's on West Sahara has been successful beyond their wildest dreams. Rosemary's at the Rio is in the location that was the revered Jean-Louis Palladin's Napa. At the Rio, their Rosemary's features light-colored woods, autumn-hued walls hung with local artists' paintings, rich carpets, a picture window overlooking the resort's beautiful pool area, and an eight-seat dining counter looking into the dramatic exhibition kitchen. The airy smoking section's massive 30-seat full-service bar is a popular gathering spot just inside the restaurant's entrance. The Jordans have developed an exquisite menu based on the freshest, locally grown ingredients, cooked in a simple, yet imaginative style with bold flavors. Their signature starter, Hugo's Texas BBQ shrimp, is served with Maytag blue cheese, coleslaw and shaved green onions. We like the chestnut soup with duck rilettes and honey-glazed chestnuts, and the pan-seared sea scallops atop parsnip potatoes with crispy prosciutto de Parma and apple cider beurre blanc. The succulent New York steak with Hudson Valley foie gras on apple brioche is a favorite, as is the savory wood oven-roasted rack of lamb on a bed of kalamata olive creamed potatoes and aged balsamic rosemary reduction. The superb wine list and extensive beer selection complement the creative cuisine. Pastry chef Linda Raymond perfected her craft at London's Cordon Bleu and Le Cirque in Las Vegas. Save room for her decadent chocolate tasting---chocolate pudding cake, chocolate mousse bar and a peanut butter chocolate wafer complemented by a white chocolate malted in a shot glass.
