When New Jersey native Josh Pollack opened Rosenberg's Bagels & Delicatessen in 2014, it was an overnight success, immediately commanding a stampede of patrons who couldn't --- and still can't --- get enough of the masterfully made bagels. The secret to those plump and chewy rolls with a hole? Adjusting the mineral quotient in Colorado's water to mimic the water in New York City, where bagels are the food equivalent of royalty. Pollack's bagels have achieved similar status here, in particular the Ronnie's Favorite paved with dill cream cheese, Scottish smoked salmon, whitefish salad and cucumber coins. Pollack smokes his fish in-house, imports meats, including his corned beef, from the Big Apple, and also dispenses breakfast sandwiches, black-and-white cookies and kugels.
