It started in 1965 when Ruth Fertel mortgaged her New Orleans home to buy a small neighborhood steakhouse and proceeded to build a steakhouse empire. New Orleans expatriate and longtime Las Vegan Marcel Taylor opened this first Las Vegas Ruth's Chris in September 1989. The 560-seat location carries out the Big Easy décor with scenes of New Orleans nightlife, cherry woods, brass appointments, etched and beveled glass, and a spacious bar. Maintained in a special cabinet at just above freezing, 12- to 14-ounce corn-fed, richly marbled U.S. Prime steaks are served sizzling with aromatic butter sauce. The New York strip and filet mignon are the most popular; gourmands go for the rib-eye and bone-in cowboy rib-eye. For starters, we like the New Orleans-style barbecue shrimp sautéed in reduced white wine, butter, garlic and spices. Center-cut pork chops are served sizzling with sweet and spicy apple slices. Save room for the chocolate-espresso sin cake, bananas Foster and the bread pudding with whiskey sauce. Starting with a small wine inventory, the Las Vegas location has a large cellar that offers an extensive selection of domestic and worldwide choices.
