A New Orleans original that grew into a nationwide steakhouse chain, Ruth's Chris is a mecca for carnivores who prefer their beef lavishly seasoned and buttered. Beef can be ordered here without those extras, but very few customers seem to do it. The steaks are of unimpeachable pedigree, prime-cut and well-aged. The filets benefit especially from the seasoned-butter application, but the best cut remains the strip, with a tender texture and deep flavor. Ruth's Chris is an all-around chophouse, with excellent cuts of lamb, veal and pork. Side dishes are gigantic, and the shrimp rémoulade, the house salad with its unique hot-paprika house dressing, and any of the dozen or so potato dishes are bounteous and tasty. The service, though fairly creaky, is attentive and friendly.
