Sabor Cocina Mexicana Restaurant Review: This elaborate eatery in The Lakes at Thousand Oaks bills its fare as Modern Mexican. Proprietors Mark and Leticia Hansen lean toward organic ingredients and artful presentation of dishes that draw on tradition, yet eschew some of the unhealthier elements of Mexican cooking. Calories come from Jacuzzi-size margaritas, instead. And who could resist a crème brûlée made with Valrhona chocolate and a sweet and spicy kick of chile guajillo? An outdoor patio overlooks the immaculate shopping center; the interior walks a tightrope between festive and ostentatious --- think a patchwork of colorful tiles and chandeliers heavy with red glass hearts. To be sure, this is a place with bold aspirations --- and prices to match. Fortunately, the food delivers. Specials follow the freshly caught and seasonally ripe. The wild Pacific shrimp served swimming in an acidic sauce of tomato and habanero were so large they resembled lobster tails. Cochinita pibil is moist and flavorful, the fork-tender pork having been marinated in achiote and baked in banana leaves. Skip the pricey carne asada tacos; here’s your chance to wrap a mole tortilla around grilled duck breast.
