The “Raw Chef” Chad Sarno was pretty unknown on British shores until Saf opened. Now there’s a following for the organic, vegetarian and vegan chef. Saf is mainly about raw food, though some dishes are marked as cooked above 48 degrees C. Starters like beetroot ravioli with cashew herb ricotta; main dishes such as the “Buddha Bowl,” a mix of teriyaki-glazed smoked tofu, jasmine rice, wok-fried greens, kimchi and sambal; and the “cheeses” made from almond, cashew and pine nut milks will convert even the most seasoned carnivore. It’s beautifully presented and the venue itself is bright and spacious. The bar offers organic wines and some first-rate cocktails. Saf fits well into the prevalent low carbon footprint ideal.
