There are many French restaurants in Singapore, but Sage stands out because of its owner, chef Jusman So. Located at a road-fronting shop house on the hip Mohamed Sultan Road, the restaurant is bathed in stark purplish-gray toned wallpaper and feels elegant without being pretentious; that is also a fair metaphor for its classic French fare. Pan-seared duck foie gras rests on a bed of pear and crunchy walnut chutney, nicely salted, and completely crusty on the outside and velvety on the inside. For main courses, there are French classics like the roasted quail breast and leg confit. It is chef So’s luscious scallop dish, though, that stands out, seared to a near crisp and served on a raft of Belgium endive in a fragrant pool of clam and cream-laced Normandy sauce. Sage has a wine list of 45 labels, of which 40 percent are French. From the rather limited dessert list, try the warm chocolate soufflé with Amaretto ice cream; coffee is a good complement.
