Though Spanish tapas restaurants might have seen their run in the U.S., Salero falls in line with a growing trend and is a modern Spanish (not tapas) establishment that focuses on seafood and quality meat mains. Chef Ashlee Aubin spent hours researching classic food, wine and sherry pairings from the region to develop a menu with highlights like tender grilled octopus a la plancha with green garbanzo hummus, Coquille olives and seasonal salad, and lamb dishes that might take shape as grilled lamb chops or slow-roasted lamb shoulder with Moorish meatball, harissa, yogurt and in-season vegetables. There’s always a whole grilled fish as well, and Maine lobster with chorizo and bomba rice, clams and tomato as a spin on paella. At the bar, enjoy a selection of Spanish gin and tonics and plenty of wines and sherries by the glass, paired with pintxos, modern-day tapas in the form of marinated olives, Marcona almonds and toasts with various toppings. Inside the cozy dining room around the corner from the long front bar, things are minimalist save for the standout bull horns and blue painted walls. Outside, a small patio offers people-watching on Randolph Street restaurant row.
