Locals waited impatiently for this restaurant to open. One reason is that chef and owner Wes Johnson is highly respected in these parts. The other is that we kind of like the idea of dining in the former mortuary where Salt is situated. Not that you’d know the building’s history from the décor---or from the large bar that’s the first thing you see when you enter. The mixologists know their craft and keep on top of trends (like making their own tincture for the Ornery Hound). But the dining room is where the real action is. It’s possible to fill up by grazing on small plates, especially the fennel meatballs, the asparagus gratin or the smoky scallops, served cleverly in sealed jars, but then you’d miss the seared trout, hay-roasted hen or St. Louis-inspired pork steak. And you definitely don’t want to bypass sampling the seasonal fruit tart with salted caramel ice cream. The wine list is surprisingly weighted toward European wines; the beer list has more diversity and flair.
